It's Dad's Turn to Cook this Mother's Day

Several delicious grilled dinners dads can make for mom's day off. Come on guys, you can do it!

 

GRILLED CHICKEN WITH KIWI SAUCE

1 TBS. butter, melted
1 1/2 TBS. plus 1/2 tsp. honey mustard
1 boneless chicken breast, pounded to 1/4" thick
3 TBS. orange juice
1/4 tsp. minced fresh ginger
1/2 small kiwi fruit peeled, halved lengthwise and sliced

Blend butter and 1 tsp. mustard, grill chicken for 8-10 minutes or until done, turning and basting with mustard mixture. Meanwhile, in a small pot heat orange juice, remaining mustard, and ginger to a boil. Remove from heat, stir in kiwi slices, and serve with grilled chicken.

 

HONEY MUSTARD-GLAZED STEAK

1 1/2 TBS. Dijon mustard, or your favorite
3/4 tsp. chopped fresh parsley
1 1/4 tsp. honey
3/4 tsp. cider vinegar
3/4 tsp. water
dash hot pepper sauce
pinch pepper
1/4 lb beef tenderloin steak
1 small onion, cut into 1/2" slices

Combine first 7 ingredients. Place beef tenderloin steak and onions on a grill over med coals, brush both sides liberally with glaze. Grill steak and onion 9-12 minutes for rare to medium, and until onions are tender. Turning steak and onion once and brushing with glaze, trim excess fat from steak, and serve with onions.

 

GLAZED VEAL CHOP WITH HONEY

2 1/4 tsp. fresh lime juice
1 1/2 tsp. honey
1/2 tsp. grated fresh ginger
1/8 tsp. grated lime peel
8 oz veal rib chop cut 1" thick

Combine first 4 ingredients. Brush veal chop liberally with the marinade and place in a zip-lock bag, seal and marinate in refrigerator for about 30 minutes while heating the grill. Remove veal chop from bag and brush again with marinade, place on grill over medium coals, grill 12-14 minutes for medium, turning once. For broiler directions: marinate chops as directed, place on a rack in broiler pan so surface of meat is 4" from heat, brush with reserved marinade and broil 14-16 minutes for medium, turning once.
