Bread Machine Oat Bread

1-1/2 tsp. active dry yeast

2 cups bread flour

1/3 cup rolled oats

1 tsp. salt

2 tsp. dark brown sugar

1 Tbs. plus 1 tsp. nonfat dry milk

2 tsp. unsalted butter

3/4 cup water, plus 1 tsp.

1 Tbs. plus 1 tsp. molasses

1 tsp. lemon juice

All ingredients are measured for a small loaf and should be at room temperature. Add ingredients in order specified for your bread machine. Set on standard setting, medium or normal baking cycle. Do not use programmable timer.

This recipe serves 12 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 12.

 

Bread Machine Pizza Dough

1 1/2 tsp. active dry yeast

3 cups unbleached all purpose flour

1-1/2 tsp. salt

1/4 cup olive oil, optional

1 cup water

All ingredients are measured for a small loaf and should be at room temperature. Add ingredients in order specified for your bread machine. Set on standard setting, medium or normal baking cycle. At the end of final cycle, transfer dough to lightly oiled work surface and roll out to fit pan. For thick crust, roll to1/2 inch allow cover with a clean kitchen cloth to rise about 20 minutes. For thin crust, simply transfer to pan that has been oiled or sprinkled with cornmeal. To make pizza, preheat oven to 450°F. Heap on your favorite toppings and bake about 15 minutes, or until crust is browned.

Bread Machine Low-fat Raisin Bread

1-1/4 tsp. active dry yeast

1-3/4 cups bread flour

1/2 cup whole wheat flour

2 Tbs. nonfat dry milk

1/2 tsp. ground cinnamon

1/4 tsp. ground cloves

1/2 cup banana, mashed

1/2 tsp. salt

1/2 cup water

1/2 cup raisins

All ingredients are measured for a small loaf and should be at room temperature. Add all ingredients, except raisins, in order specified for your bread machine. Set on standard setting, medium or normal baking cycle. Add raisins at the end of the first kneading cycle.
